I've decided to call this concoction the "After-School Mocktail" because my son frequently asks me to make it after school. Although I have never tried a "Pink Drink" from Starbucks, I am confident I can replicate the drink for my daughter.
You can add any kind of berry you like, from strawberries and raspberries to blueberries (which will turn the drink purple). After a long day in the sun, this drink tastes even better with the addition of sparkling water, either plain or flavored. I've made it even healthier by adding Yakult, a sweet Japanese probiotic drink, but feel free to substitute your favorite yoghurt drink or leave it out altogether.
Dalgona Matcha was the finishing touch on my own drink. I use matcha in nearly all of my baked goods and beverages because I adore the earthy flavor it imparts and because of the many health advantages it provides, including protection from free radicals thanks to its high antioxidant content.
If you're looking for a mocktail to serve your children that will leave them feeling refreshed, look no further...Enjoy!
Serves 2
Ingredients:
5-6 pieces medium sized strawberries, halved
6-7 pieces of raspberries
*You can also use a 1-2 handful of blueberries in exchange of any of the berries above.
1 tbsp granulated sugar, adjust to taste (optional)
1/4 cup water
2 tsp sweetened condensed milk
Plain or flavored sparkling water (I used strawberry)
1 bottle Yakult (80 ml)
Ice cubes
Topping (optional):
Let's make it!
In a blender, combine berries, sugar and water. Blend until smooth.
Swirl and coat the inside of 2 tall glasses each with 1 teaspoon of sweetened condensed milk
Divide and pour the blended berries on each glass. Add ice cubes.
Add seltzer into the glasses (make sure to make space for the Yakult, if adding)
Add Yakult, pouring on top of ice cubes to make a layering effect.
Top with Dalgona Matcha, if preferred.
