The name says it all! These are succulent shrimps lathered with butter and with garlicky, gingery oyster sauce.
This is my daughter's favorite seafood dish, which she would always request from me to cook when she goes home from college, and also the favorite of my previous manager, who would always order from me when she has a gathering in their house and would like to impress her guests.
I first tasted this cuisine in the Philippines in "Dampa Seaside Market" Manila, where you buy pounds and pounds of prawns, crabs, fish and mussels cooked in their special sauce, "dumped" on the table for the whole family and friends to feast on. I don't exactly know the ingredients of their sauce when I first tasted it, but this dish is a replica of their super yummy special sauce.
It needs only 6 ingredients, and very easy and quick to prepare. I used extra large shrimps (heads off and deveined) which takes only a few minutes to cook in butter.
So how do you know when a shrimp is cooked? First, shrimps curl to a "C' when they are "cooked", if you see them curl into "O" it means they are "overcooked". Second, shrimps change its color from translucent gray to opaque pink or orange, so make sure you don't over do it otherwise it will be tough and dry. I put a LOT of garlic and ginger, it makes the dish so tasty with a little of spice...so make sure you put a lot of those. I used Lee Kum Kee oyster sauce which is a thick, savory condiment used mostly in Asian cuisines together with soy sauce. And lastly, unsalted butter that adds to the creamy taste of the dish.
So put your sleeves up, because this a seafood dish worth fighting for.
Ingredients:
2 pounds of extra large shrimps (heads off and deveined)
3-4 tbsp garlic, chopped
3-4 tbsp ginger, chopped
3-4 tbsp of dark soy sauce
1/3 cup of oyster sauce
1 stick of unsalted butter (8 tbsp)
Scallions, chopped for garnish
Let's cook!
In a medium bowl, add soy sauce and oyster until combined, you can add more oyster sauce until you get your desired taste
Heat a large skillet, and melt butter, once melted, add in garlic and ginger
Once garlic and ginger becomes soft (2-3 minutes), add in soy sauce and oyster mixture.
When sauce simmers, mix in shrimp (don't mix too much, just watch for the signs of cooked shrimp).
When shrimp turn to orange or pink (4-5 minutes), turn off heat and its ready to serve. Garnish with scallions. Enjoy!!!
