Makes 1 9-inch single pie (6-8 slices)
Ingredients:
3 ounces (85g) unsweetened chocolate, chopped
3/4 cup (170g) unsalted butter
3 eggs, at room temperature
1 1/4 cups granulated sugar
6 tbsp (50g) all purpose flour
1/4 tsp salt
1 tbsp pure vanilla extract
Let's Make Pie!
Preheat the oven to 350 degrees Fahrenheit.
Combine the butter and chocolate in a saucepan and cook, stirring occasionally, until melted. Remove from heat and cool. Alternatively, add to a glass bowl and melt in the microwave, stopping every 30 seconds to stir until melted. Let it cool.
In a large bowl, lightly beat the eggs, being careful not to add too much air.
Add the sugar, flour and salt and mix until incorporated.
Add the cooled chocolate mixture and vanilla and then stir until blended.
Pour into the cooled pie shell.
Bake for 40-45 minutes until the top is dry, puffed and shiny. There will be some cracking around the edges while baking and /or cooling. This souffle effect is normal.
Allow to cool to room temperature before cutting and serving.
