Makes 1 8-inch square pan, 16 bars

8x8 inch square pan
Parchment paper
Stand mixer
Spatula
Ingredients:
8 tbsp (1 stick) unsalted butter, melted
1/2 cup light brown sugar, packed
1 large egg, room temperature
1/2 teaspoon salt
1/2 mango extract
1/4 tsp orange zest
1 cup all-purpose flour
1/2 to 3/4 cup dried mangoes, chopped
Let's Bake!
Melt and brown the butter. In a saucepan over medium heat, add in butter, and brown the butter. Let it cool to room temperature.
Prepare. Preheat oven to 350F, and line pan with parchment paper
Mix the batter. In the bowl of your stand mixer, add in brow butter and brown sugar. With the paddle attachment, mix on medium speed till the mixture is smooth. Then add in the egg, and mix just until well incorporated. Add in salt, mango extract, and orange zest. Mix until combined, and scrape down the bowl and paddle attachment as needed. With the mixer on low speed, slowly add flour, and continue mixing until no trace of flour is seen, preventing over mixing. Detach the bowl from the stand mixer. Fold in chopped dried mangoes.
Bake. Transfer batter into the prepared baking pan. Bake for 20-25 minutes, or until set in the middle.
Cool down. Let it cool down for 10 minutes then transfer to a cooling rack. Let it cool completely to room temperature.
Ready to eat. Cut into 16 square bars, and serve. Enjoy!
