"How to Make Delicious Carrot Cake Oatmeal for a Healthy Breakfast"

Carrot cake is one of my favorite cakes, and I've probably baked it a hundred times because many of my friends order it from me for treats during the holidays or special occasions. Its sweet flavor and natural bright appearance make it an ideal dessert to serve on special events...but why limit yourself to having this lovely delicacy on special occasions when you can enjoy it first thing in the morning? Why not? Carrots are a nutritious food. This dish, combined with oats and raisins and topped with milk or cottage cheese, can take your breakfast to the next level.

Makes 2 servings

Ingredients:

  • 1/2 cup shredded carrots

  • 1.5 cups water

  • 1 cup old-fashioned rolled oats

  • 1/2 tsp ground cinnamon

  • 1/4 cup raisins

  • 1 tbsp brown sugar

  • 1/4 cup crushed pineapple

Toppings (optional):

  • shredded carrots

  • Raisins

  • Low fat milk or any plant-based milk or cottage cheese or vegan-based cream cheese (optional)

  • walnuts


Instructions:

  1. In a medium pot, combine carrots and a pinch of salt. Bring to a boil on medium-high heat. Stir in oats, cinnamon and raisins. Reduce heat to low. Let is simmer for 5-7 minutes, or until oats have thickened, stirring occasionally.

  2. Remove pot from heat, stir in the sugar and pineapple.

  3. Divide oatmeal among 2 bowls. Top each bowl with preferred topping.

  4. Enjoy!
