Stir-fry Seafood Black Ramen

These noodles have a gothic aspect that makes it hard to picture them with your favorite vegetables and fish. The "Forbidden Black Rice" (also known as "Emperor's Rice") used to make these noodles is reserved for the highest of the high in traditional Chinese medicine, as it is said to promote longevity and good health. Thankfully, times have changed, and you can find black rice in any number of places, including grocery stores, specialty food stores, and even online.

Studies have shown that the high levels of minerals and antioxidants in forbidden rice can help keep us healthy. In addition to being low in calories, it also contains very little fat and salt, making it a good choice for those who are trying to watch their weight.

Despite the fact that at first glance they look like long black worms wriggling around in your bowl, you will quickly be fascinated by its nutty flavor, chewy texture, and nutrient boost (as the old adage goes, "looks can be deceiving").

Makes 2-3 servings

Ingredients:

Stir-fry:

  • 1 - 2.8 oz (80gms) Lotus Foods, Forbidden Rice Ramen with White Miso Soup (discard flavor packet)

  • 1 cup of sliced vegetables of choice (I used carrot sticks, and green beans)

  • 2 tsp vegetable oil

  • 2 cloves garlic

  • 2 tsp ginger, grated

  • 3 scallions, sliced (separate white from green part)

  • Choice of seafood (I used 2 packs of seafood mix

Sauce:

  • 2 tbsp hoisin sauce

  • 1/2 tbsp low sodium soy sauce

  • 2 tbsp water or vegetable broth

  • 1/2 tsp sesame oil

  • 1/2 tsp cornstarch

  • 1/4 tsp red pepper flakes

  • 2 tsp sugar (for some sweetness, optional)

  • Salt and pepper to taste

Let's Cook!

  • Bring 4 cups water to a boil and stir in ramen. Cook 3 minutes and drain reserving 1/4 cup pasta water.

  • While waiting for the water to boil, whisk sauce ingredients in a small bowl. Set aside.

  • In a skillet, heat oil, sauté garlic, scallions (white part) and ginger until fragrant.

  • Add vegetables in a skillet until tender crisp, about 3-4 minutes.

  • Add seafood, cook for 2-3 mins, paying attention to color and consistency. Seafood should turn opaque and firm.

  • Add sauce and simmer until thickened, about 2-3 minutes.

  • Stir in noodles. Add pasta water a little at a time to reach desired consistency.

  • Serve while warm. Garnish with scallions (green part). Enjoy!
