Makes 18 thick and large cookies
Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1.5 tsp pure vanilla extract
2 large eggs, room temperature
2.5 cups all-purpose flour
1.5 tsp baking soda
1 tsp kosher salt
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/3 cup quick cooking oats
2.5 cups semi-sweet chocolate chips
3/4 cup chopped walnuts
Let's bake cookies!
Preheat oven to 350F. Line 2 baking sheets with parchment paper
In a large mixing bowl, using a hand mixer, cream butter, brown and white sugars and vanilla until light and fluffy, about 5 minutes.
Add eggs one at a time into the butter mixture, beat until smooth
In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg.
Gradually stir flour mixture into the butter mixture.
Fold in oats, chocolate chips and walnuts.
Using your 1/4 measuring cup, scoop cookie batter, form into a ball, and place on prepared baking sheets around 2 inches apart. Slightly flatten top of cookie dough.
Bake until edges are lightly golden, around 17-18 minutes.
